  • purple cabbage (100g, shredded)
  • fresh cilantro (1/4 cup, chopped)
  • lime (1, juiced)
  • olive oil (2 tbsp)
  • salt (to taste)

To prepare this colorful quinoa salad, start by rinsing the quinoa under cold water. In a saucepan, combine the quinoa with 300ml of water and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 15 minutes or until all the water is absorbed. Fluff the quinoa with a fork and let it cool to room temperature.
