Colorful Summer Fruity Quinoa Salad Recipe

Fruity Quinoa Salad

Today, I’m excited to share my latest creation with you all: a refreshing and colorful fruity quinoa salad that’s perfect for summer gatherings or a light dinner. This dish is a burst of flavors and textures that will leave you wanting more!

Ingredients:

  • quinoa (200g)
  • strawberries (150g)
  • mango (1, diced)
  • avocado (1, diced)
  • red onion (1/2, finely chopped)
  • fresh mint leaves (a handful, chopped)
  • lime (1, juiced)
  • honey (2 tbsp)
  • olive oil (2 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • strainer
  • knife
  • cutting board
  • mixing bowl
  • whisk

To start, rinse the quinoa under cold water using a strainer to remove any bitterness. In a saucepan, bring 2 cups of water to a boil and add the quinoa. Reduce heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed. Fluff the quinoa with a fork and let it cool.

In a large mixing bowl, combine the cooked quinoa, diced strawberries, mango, avocado, and red onion. In a separate small bowl, whisk together the lime juice, honey, olive oil, salt, and pepper to make the dressing.

Pour the dressing over the quinoa and fruit mixture, and toss everything together until well coated. Add in the chopped mint leaves and gently mix.

The fruity quinoa salad is now ready to serve! The combination of sweet mango, juicy strawberries, creamy avocado, and the tangy dressing creates a delightful explosion of flavors in every bite.

This dish weighs approximately 900g once prepared and serves 4 people. Each serving is around 225g and contains about 300 calories.

One tip to make this salad even more flavorful is to let it sit in the fridge for an hour before serving. This allows the ingredients to marinate and come together beautifully.
