Add in the bell peppers, carrots, snow peas, purple cabbage, and baby corn. Cook for 3-4 minutes, stirring frequently, until the vegetables are just tender-crisp.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, cornstarch, and water. Pour this sauce over the vegetables in the wok and stir well to coat. Cook for another 1-2 minutes until the sauce has thickened slightly and everything is heated through.

Serve the rainbow vegetable stir-fry over cooked rice and garnish with sliced green onions. This dish is best enjoyed fresh and hot, so dig in right away!
