Today’s Unique Creation: Spicy Mango Curry Pasta

Being a lover of both Indian and Italian cuisine, I often find myself torn between which to choose for dinner. Today, I decided to merge the two in a unique and flavorful recipe for Spicy Mango Curry Pasta. This dish combines the rich and aromatic flavors of a traditional curry with the comforting appeal of a creamy pasta dish. It’s the perfect balance of sweet, savory, and spicy, making it a must-try for all food lovers looking to spice up their dinner routine.

Ingredients:

  • penne pasta (200g)
  • ripe mango, diced (1 large)
  • coconut milk (200ml)
  • curry powder (2 tsp)
  • chili flakes (1/2 tsp)
  • minced garlic (2 cloves)
  • diced red onion (1/2)
  • chopped cilantro (for garnish)
  • olive oil (2 tbsp)
  • salt and pepper (to taste)

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • cutting board

To start, cook the penne pasta according to the package instructions until al dente. In a saucepan, heat olive oil over medium heat and sauté the diced red onion and minced garlic until fragrant. Add in the curry powder and chili flakes, stirring to combine.

Next, pour in the coconut milk and add the diced mango. Let the mixture simmer for a few minutes until the mango softens and the flavors meld together. Season with salt and pepper to taste.

Once the sauce has thickened slightly, add the cooked penne pasta into the pan, tossing to coat evenly. Continue to cook for another 2-3 minutes, allowing the pasta to absorb the flavors of the curry mango sauce.

To serve, garnish the Spicy Mango Curry Pasta with fresh chopped cilantro for a burst of freshness and color. This dish can be enjoyed hot or cold, making it a versatile and satisfying meal option.
