Today’s Special: Butternut Squash and Sage Risotto

As the weather starts to cool down and the leaves change color, I find myself craving warm and comforting dishes. Today, I want to share a recipe for a delicious Butternut Squash and Sage Risotto that is perfect for cozy evenings at home.

Ingredients:

  • butternut squash (approx. 500g)
  • arborio rice (approx. 300g)
  • fresh sage leaves (approx. 20g)
  • shallot (approx. 1)
  • vegetable broth (approx. 1L)
  • butter (approx. 50g)
  • parmesan cheese (approx. 100g)
  • dry white wine (approx. 120ml)
  • olive oil
  • salt
  • pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large saucepan
  • wooden spoon
  • cheese grater

To start, peel and dice the butternut squash into small cubes. Finely chop the shallot and sage leaves. In a large saucepan, heat some olive oil over medium heat. Add the diced shallot and cook until translucent.

Add the arborio rice to the pan and toast it for a couple of minutes until it becomes slightly translucent. Deglaze the pan with the white wine and cook until the liquid is almost absorbed.

Gradually add the vegetable broth to the rice, one ladle at a time, stirring constantly until each ladleful is absorbed before adding more. This process will take about 20-25 minutes.

In a separate pan, melt the butter and add the diced butternut squash. Cook until the squash is tender. Season with salt and pepper.

Once the risotto is creamy and the rice is cooked to al dente, stir in the cooked butternut squash, chopped sage, and grated parmesan cheese. Mix well to combine all the flavors.

Tip:

For an extra layer of flavor, try adding a touch of nutmeg to the risotto before serving. It pairs perfectly with the earthy sage and sweet butternut squash.

The approximate total weight of the cooked dish is 1300g, with 4 servings at 325g each. Each serving is approximately 400 calories.
