Ingredients:

  • 1 kg watermelon, diced
  • 200g cucumber, peeled and diced
  • 150g red bell pepper, diced
  • Juice of 2 limes
  • 100g red onion, finely chopped
  • Handful of fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
