Cozy Autumn Acorn Squash Recipe: A Flavorful Fall Delight

Autumn Harvest Stuffed Acorn Squash

Ingredients:

  • 2 small acorn squash
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 2 tbsp fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Start by preheating your oven to 400°F (200°C). Cut the acorn squash in half lengthwise and scoop out the seeds. Place the squash halves cut side down on a baking sheet lined with parchment paper. Roast in the oven for about 30-35 minutes, until the squash is tender.

While the squash is roasting, rinse the quinoa under cold water. In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is cooked and the liquid is absorbed.

In a skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute, until fragrant. Stir in the cooked quinoa, dried cranberries, chopped pecans, fresh rosemary, salt, and pepper. Cook for another 2-3 minutes, until everything is well combined.

Once the acorn squash is ready, remove them from the oven and flip them over. Fill each squash half with the quinoa stuffing mixture. Return to the oven and bake for another 10-15 minutes, until the tops are slightly browned.

Serve the Autumn Harvest Stuffed Acorn Squash hot, garnished with extra fresh rosemary if desired. Enjoy the flavors of fall in every bite!
