Today’s Recipe: Autumn Harvest Chicken Pasta

Hello, foodies! Today, I’m excited to share with you a cozy and comforting dish that’s perfect for the crisp autumn weather we’re experiencing. This Autumn Harvest Chicken Pasta combines the flavors of the season in a unique and delicious way. It’s a dish that warms both the body and the soul, making it a must-try for this time of year.

For this recipe, you’ll need the following ingredients:

  • 200g chicken breast
  • 150g butternut squash
  • 50g dried cranberries
  • 100g spinach
  • 30ml balsamic vinegar
  • 250g pasta of your choice

To bring this dish to life, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • boiling pot

Start by cutting the chicken breast into bite-sized pieces and seasoning them with salt and pepper. In a large skillet over medium heat, cook the chicken until it’s no longer pink in the center. Remove the chicken from the skillet and set it aside.

Next, peel and dice the butternut squash into small cubes. Add the butternut squash to the same skillet along with a splash of water, cover, and cook until the squash is tender. Stir in the dried cranberries and balsamic vinegar, letting the flavors meld together.

While the butternut squash is cooking, boil water in a pot and cook the pasta according to the package instructions. Drain the pasta and reserve a cup of the cooking water.

Once the butternut squash is tender, add the cooked chicken back to the skillet along with the spinach. Toss everything together until the spinach wilts.

At this point, add the cooked pasta to the skillet and toss everything together, adding a bit of the reserved pasta water to create a creamy sauce.

Serve the Autumn Harvest Chicken Pasta warm, garnished with some freshly grated parmesan cheese for an extra touch of richness.

The approximate total weight of the cooked dish is 800g, with 4 servings at 200g each. This dish is approximately 350 calories per serving.

A clever tip to make this dish even more delicious is to sprinkle a pinch of cinnamon over the butternut squash while it’s cooking. The warmth of the cinnamon adds a cozy autumn twist to the dish that will have your taste buds dancing.

I hope you give this Autumn Harvest Chicken Pasta a try and enjoy the flavors of the season in a new and exciting way. Feel free to customize the recipe with your favorite seasonal ingredients to make it your own. Happy cooking!
