  • butternut squash (diced) – 500g
  • chorizo sausage (sliced) – 200g
  • sweet potato (cubed) – 300g
  • canned chickpeas (drained) – 400g
  • onion (chopped) – 1 large
  • garlic (minced) – 3 cloves
  • smoked paprika – 1 tsp
  • cumin – 1 tsp
  • salt and pepper to taste
  • olive oil – 2 tbsp

  • cutting board

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the diced butternut squash, sliced chorizo sausage, cubed sweet potato, drained chickpeas, chopped onion, and minced garlic on the baking sheet. Drizzle with olive oil and sprinkle with smoked paprika, cumin, salt, and pepper. Toss everything together until well coated, then spread out into an even layer.

Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and the sausage is cooked through. While the dish is roasting, heat a large skillet over medium heat.
