Autumn Harvest Stuffed Bell Peppers

Hey everyone, today I’m excited to share with you my recipe for Autumn Harvest Stuffed Bell Peppers. As the weather gets cooler and the leaves start to change, I love creating comforting dishes that highlight the flavors of the season. These stuffed bell peppers are filled with a unique combination of ingredients that will warm your soul and fill your home with amazing aromas.

Ingredients:

  • 4 large bell peppers
  • 200g quinoa
  • 1 can (400g) chickpeas
  • 1 cup cranberries
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish and set aside.

In a saucepan, cook the quinoa according to the package instructions. Once cooked, transfer it to a mixing bowl. Drain and rinse the chickpeas, then add them to the bowl with the quinoa. Stir in the cranberries, cinnamon, nutmeg, salt, pepper, parsley, and walnuts until well combined.

Spoon the quinoa mixture into each bell pepper, filling them to the top. Place the tops back on the peppers and cover the dish with foil. Bake in the preheated oven for 30-35 minutes, or until the peppers are tender.

Once cooked, remove the foil and bake for an additional 5-10 minutes to lightly brown the tops of the peppers. Serve hot and enjoy the cozy flavors of fall!
