Greetings, foodies! Today, I am excited to share with you a unique twist on a classic comfort dish that is perfect for chilly autumn evenings. As the weather starts to cool down, I find myself craving warm and comforting meals that are hearty and satisfying. This savory zucchini bread pudding is the perfect dish to cozy up with on a crisp fall day.

For this recipe, you will need the following ingredients:

  • 2 medium zucchinis, grated
  • 300g of stale bread, cubed
  • 150g of cheddar cheese, shredded
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 4 eggs
  • 400ml of milk
  • A handful of fresh parsley, chopped
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • mixing bowl
  • whisk
  • sauté pan
  • baking dish
  • oven

Start by preheating your oven to 180°C (350°F). In a large mixing bowl, combine the grated zucchini, cubed bread, cheddar cheese, diced onion, minced garlic, and chopped parsley. In a separate bowl, whisk together the eggs and milk until well combined. Season the mixture with salt and pepper to taste.

Pour the egg and milk mixture over the zucchini bread mixture and stir until everything is well coated. Let the mixture sit for about 10 minutes to allow the bread to absorb the liquid. Transfer the mixture to a greased baking dish and spread it out evenly.

Bake the zucchini bread pudding in the preheated oven for 45-50 minutes, or until the top is golden brown and the pudding is set. Remove from the oven and let it cool slightly before serving.

This savory zucchini bread pudding weighs approximately 1200g and serves 6 people. Each serving is around 200g and contains approximately 350 calories.
