Delicious Carrot Cake Pancakes

As the seasons transition from summer to fall, I find myself craving cozy breakfasts that warm me from the inside out. Today, I’m excited to share a recipe for delicious carrot cake pancakes that are the perfect blend of sweet, spiced, and comforting. These pancakes are a twist on the classic dessert, perfect for a chilly morning treat.

Ingredients:

  • 2 medium carrots, grated
  • 200g all-purpose flour
  • 50g granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 250ml milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp butter, melted
  • 50g chopped walnuts
  • cream cheese frosting for topping

Kitchen Tools:

To start, in a large mixing bowl, combine the grated carrots, flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts.

Heat a skillet over medium heat and lightly grease with butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.

Serve the carrot cake pancakes warm, topped with a generous dollop of cream cheese frosting. Enjoy the perfect balance of sweetness and spice in every bite!
