Ingredients:

  • arborio rice (300g)
  • pumpkin, diced (500g)
  • onion, finely chopped (1 medium)
  • garlic, minced (2 cloves)
  • vegetable broth (1 liter)
  • cinnamon (1 tsp)
  • nutmeg (1/2 tsp)
  • parmesan cheese, grated (50g)
  • butter (50g)
  • salt and pepper to taste

Start by heating a saucepan over medium heat and melting the butter. Add the chopped onion and minced garlic, cooking until softened and fragrant. Then, stir in the arborio rice, coating it in the butter mixture.

Next, gradually add the vegetable broth, a ladleful at a time, stirring constantly until the rice absorbs the liquid. This process should take about 20-25 minutes, and the rice should be creamy but still have a slight bite to it.
