  • dried figs (100g)
  • red wine (150ml)
  • honey (30g)
  • orange zest
  • salt
  • black pepper

Preparation

To start, preheat the oven to 180°C. Using a sharp chef’s knife, score the duck breast skin in a crisscross pattern. In a saucepan, combine the red wine, honey, cinnamon stick, star anise, juniper berries, and a pinch of salt. Bring the mixture to a simmer, then remove from heat.

Place the duck breast in a roasting pan and pour the red wine mixture over it. Roast in the oven for about 25-30 minutes until the duck is cooked to your liking. In the last 10 minutes of roasting, add the dried figs to the pan to allow them to caramelize.

Once the duck is cooked, remove it from the oven and let it rest for a few minutes before slicing. In the meantime, strain the cooking liquid from the roasting pan into a saucepan. Add orange zest and a pinch of black pepper to the sauce and simmer until it thickens slightly.
