Introducing: Spiced Pumpkin Risotto

Today, I am excited to share with you my recipe for Spiced Pumpkin Risotto. As the weather starts to cool down and autumn sets in, there’s nothing quite like a warm, comforting bowl of risotto to cozy up with. This dish combines the earthy sweetness of pumpkin with a hint of warm spices for a truly unique flavor profile.

Ingredients:

  • 200g Arborio rice
  • 300g pumpkin, peeled and diced
  • 1L vegetable broth
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 50g butter
  • 50g grated Parmesan cheese
  • to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • grater

To start, heat the vegetable broth in a saucepan over low heat. In another saucepan, melt the butter and sauté the onion and garlic until fragrant. Add the Arborio rice and toast for a few minutes until slightly translucent.

Next, add the diced pumpkin to the rice mixture, along with the cinnamon and nutmeg. Stir well to combine the flavors. Begin adding the warm vegetable broth, one ladle at a time, stirring continuously and allowing the liquid to absorb before adding more. This process will take about 20-25 minutes.

Once the rice is al dente and the pumpkin is tender, stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

Serve the Spiced Pumpkin Risotto hot, garnished with some extra Parmesan cheese and a sprinkle of freshly ground black pepper.

The approximate total weight of the cooked dish is 900g, with 4 servings at 225g each. One serving of this delicious Spiced Pumpkin Risotto is approximately 350 calories.

One unique tip for this recipe is to roast the pumpkin beforehand for an even deeper flavor. Simply toss the diced pumpkin in olive oil, salt, and pepper, and roast in the oven at 200°C for 20-25 minutes before adding it to the risotto.
