Today’s Recipe: Savory Pumpkin Gnocchi

As the leaves start to change color and the weather gets cooler, I find myself craving cozy and comforting dishes. That’s why I’m excited to share with you my latest creation: savory pumpkin gnocchi. This dish is perfect for a fall evening spent at home, curled up with a good book or a movie. The warm flavors of pumpkin, sage, and Parmesan cheese come together to create a deliciously satisfying meal.

Ingredients:

  • 200g pumpkin puree
  • 150g boiled potato
  • 150g all-purpose flour
  • 50g grated Parmesan cheese
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 10 fresh sage leaves

To start, mix the pumpkin puree, boiled potato, flour, Parmesan cheese, egg, salt, and pepper in a large mixing bowl until a dough forms. Roll the dough into long ropes, then cut into bite-sized pieces. Press each piece with a fork to create the classic gnocchi shape.

Bring a large pot of salted water to a boil and cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and transfer to a plate.

In a skillet, melt the butter over medium heat. Add the fresh sage leaves and cook until crispy, about 1-2 minutes. Toss in the cooked gnocchi and sauté until golden brown, about 3-4 minutes.

Serve the savory pumpkin gnocchi hot, garnished with additional Parmesan cheese if desired.

Clever Tip:

For an extra flavorful twist, roast the pumpkin before pureeing it for a deeper, caramelized flavor in the gnocchi.
