Fall Comfort Food Recipe: Rustic Pumpkin Apple Soup

As the temperature starts to drop and the leaves begin to change color, I find myself craving warm, hearty dishes that remind me of cozy fall nights. Today, I’m excited to share with you my recipe for Rustic Pumpkin Apple Soup. This flavorful and comforting soup is the perfect way to embrace the flavors of fall and warm your soul on a chilly evening.

For this recipe, you will need the following ingredients:

  • 500g pumpkin puree
  • 3 apples, peeled and diced
  • 1 large onion, chopped
  • 2 stalks of celery, chopped
  • 1 liter vegetable broth
  • 200ml heavy cream
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste

To bring this delicious soup to life, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • soup pot
  • immersion blender

Start by sautéing the chopped onion and celery in a soup pot until they are soft and translucent. Add in the diced apples and cook for a few more minutes until they begin to soften. Next, pour in the vegetable broth and pumpkin puree, stirring to combine all the ingredients.

Let the soup simmer for about 20 minutes to allow the flavors to meld together. Then, using an immersion blender, carefully blend the soup until it reaches a smooth and creamy consistency. Stir in the heavy cream, cinnamon, nutmeg, salt, and pepper, adjusting the seasoning to suit your taste preferences.

Once the soup is heated through, it’s ready to serve. Ladle it into bowls and garnish with a drizzle of cream, a sprinkle of cinnamon, and a few apple slices for a beautiful presentation.

This Rustic Pumpkin Apple Soup weighs approximately 1800g when cooked and serves 6 people. Each serving is around 300g, with an estimated calorie count of 250 per serving.

One unique tip for this recipe is to roast the pumpkin and apples before pureeing them for an added depth of flavor. The roasting process caramelizes the sugars in the ingredients, resulting in a richer and more complex soup.

I hope you enjoy making and savoring this Rustic Pumpkin Apple Soup as much as I do. Feel free to make it your own by adding your favorite spices or toppings. Happy cooking!
