Welcoming Fall with a Cozy Meal

As the leaves start to change colors and the weather begins to cool down, I find myself craving warm, comforting meals that remind me of cozy autumn evenings. Today, I’m excited to share with you a unique recipe that combines the richness of beef stew with the subtle sweetness of butternut squash. This dish is perfect for those looking to welcome fall with a delicious and hearty meal.

Ingredients:

  • 500g beef chuck, cubed
  • 1 small butternut squash, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 garlic cloves, minced
  • 1L beef broth
  • 250ml red wine
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper, to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • Dutch oven
  • wooden spoon
  • ladle

To start, heat some oil in a Dutch oven over medium heat. Add the cubed beef chuck and sear it until browned on all sides. Once the beef is browned, remove it from the pot and set it aside.

Next, add the chopped onion, sliced carrots, and minced garlic to the Dutch oven. Cook until the vegetables are soft and fragrant. Return the beef to the pot and pour in the beef broth and red wine. Add the bay leaves, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 hours, stirring occasionally.

After the beef has cooked for 1.5 hours, add the cubed butternut squash to the pot. Continue to simmer the stew for an additional 30 minutes, or until the squash is tender and the beef is melt-in-your-mouth delicious.

Once the stew is ready, remove the bay leaves and season with additional salt and pepper if needed. Serve the stew hot in bowls, garnished with fresh thyme if desired.

This butternut squash beef stew weighs approximately 2100g in total and serves 6. Each serving weighs around 350g and has an estimated calorie count of 400.

One tip to make this stew even more flavorful is to add a dash of cinnamon and a sprinkle of brown sugar to enhance the sweetness of the butternut squash. These unexpected ingredients will take your fall stew to the next level!

I hope you give this unique butternut squash beef stew a try and enjoy it as much as I do. Feel free to tailor the recipe to your own preferences by adding your favorite herbs or vegetables. Happy cooking!
