Cozy Fall Recipe: Creamy Mushroom Risotto

The Perfect Autumn Comfort Food: Creamy Mushroom Risotto

As the leaves start to change colors and the air becomes crisp, I find myself craving hearty and comforting dishes. Today, I’m excited to share my recipe for a creamy mushroom risotto that is perfect for cozy fall evenings at home.

Ingredients:

  • large skillet
  • wooden spoon

For this delicious risotto, you will need:
– 300g arborio rice
– 1 liter vegetable broth
– 250g mixed mushrooms (such as shiitake, cremini, and oyster), sliced
– 1 onion, finely chopped
– 3 garlic cloves, minced
– 100ml white wine
– 50g Parmesan cheese, grated
– 2 tbsp butter
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

Preparation:

Start by heating the vegetable broth in a saucepan over low heat. In a large skillet, melt the butter and sauté the chopped onion until it becomes translucent. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and tender.

Next, add the arborio rice to the skillet, stirring well to coat the grains in the butter. Pour in the white wine and stir until it has been absorbed by the rice. Begin adding the warm vegetable broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding more.

Continue adding the broth and stirring the risotto until the rice is creamy and cooked to your desired consistency. This process should take about 20-25 minutes. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Tips:

For an extra depth of flavor, you can also add a splash of truffle oil to the risotto just before serving. This will elevate the dish and add a luxurious touch that will impress your guests.

Once the risotto is ready, serve it hot, garnished with freshly chopped parsley. This creamy mushroom risotto is best enjoyed fresh and pairs perfectly with a glass of white wine.
