  • Pumpkin puree (250g)
  • Vegetable broth (1 liter)
  • Onion, finely chopped (1)

  • Curry powder (1 tsp)
  • Butter (50g)
  • Parmesan cheese, grated (50g)
  • Fresh parsley, chopped (for garnish)

To start, heat the vegetable broth in a saucepan and keep it warm on low heat. In another large saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.

Next, add the Arborio rice to the saucepan and stir to coat the grains in the butter. Sprinkle in the curry powder, continuing to stir for a minute until the rice is slightly toasted.

Begin ladling the warm vegetable broth into the rice mixture, one ladleful at a time. Stir continuously and allow the rice to absorb the broth before adding more. This process should take about 20 minutes, resulting in a creamy and tender risotto.

Once the risotto reaches a creamy consistency, stir in the pumpkin puree until well incorporated. Add the grated Parmesan cheese and gently fold it into the risotto until melted and combined.
