Ingredients:

  • 1 small pumpkin (about 500g, diced)
  • 1 cup of red lentils (200g)
  • 1 can of coconut milk (400ml)
  • 1 onion (150g, chopped)
  • 3 cloves of garlic (10g, minced)
  • 1-inch piece of ginger (15g, grated)
  • 2 tablespoons of curry powder
  • 1 teaspoon of cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of cayenne pepper
  • 2 cups of vegetable broth (500ml)
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Add the diced pumpkin, red lentils, coconut milk, and vegetable broth to the pot. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until the pumpkin is tender and the lentils are cooked through.

Once the pumpkin curry is ready, taste and adjust the seasoning if needed. Serve hot with a side of basmati rice or naan bread for a complete meal.
