That’s why today, I want to share with you a unique recipe for savory pumpkin and parmesan bread pudding. This dish is perfect for a cozy night in or as a side dish for a fall gathering with friends and family.

Ingredients:

  • 200g pumpkin puree
  • 300g day-old bread, cubed
  • 100g grated parmesan cheese
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 300ml whole milk
  • 2 eggs
  • 50g butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg

To start, preheat your oven to 350°F (180°C). In a sauté pan, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant.

In a mixing bowl, whisk together the pumpkin puree, milk, eggs, salt, pepper, and nutmeg. Add the cooked onion and garlic mixture, along with half of the grated parmesan cheese. Mix well before gently folding in the cubed bread, ensuring it is evenly coated.

Transfer the mixture into a greased baking dish and sprinkle the remaining parmesan cheese on top. Bake in the preheated oven for 30-35 minutes, or until the pudding is set and golden brown on top.

Once the bread pudding is cooked through, remove it from the oven and let it cool slightly before serving. This savory pumpkin and parmesan bread pudding is best enjoyed warm, making it a perfect dish for a comforting fall meal.
