Ingredients:

  • 1 small pumpkin, diced (about 500g)
  • 2 pears, sliced (about 300g)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of coconut milk
  • 2 tablespoons of olive oil
  • 2 tablespoons of maple syrup
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • Salt and pepper to taste

I start by preheating the oven to 400°F (200°C). On a baking sheet, I arrange the diced pumpkin and sliced pears in a single layer. Drizzle with olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper. Roast in the oven for about 30-35 minutes until the pumpkin is tender and slightly caramelized.

In a pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant. Add the roasted pumpkin and pears to the pot, along with the vegetable broth. Bring to a simmer and let it cook for about 15 minutes.

Using a blender, carefully blend the soup until smooth. Return the soup to the pot and stir in the coconut milk. Adjust the seasoning with salt and pepper to taste.

Serving:

This roasted pumpkin and pear soup serves 4 people and weighs approximately 1600g when cooked. Each serving is around 400g. As an estimate, each serving contains about 250 calories.

Clever Tip:
