This Spiced Pumpkin and Duck Ragout combines rich duck meat with sweet pumpkin and a blend of warm spices, creating a dish that is both hearty and flavorful. Ingredients:

  • 1 duck breast (about 300g), skin-on, diced
  • 1 small pumpkin (about 500g), peeled and cubed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cinnamon stick
  • 2 star anise
  • 3 cloves
  • 500ml chicken or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

To start, heat the olive oil in a large pot over medium heat. Add the diced duck breast and sear until browned on all sides. Remove the duck from the pot and set aside.

In the same pot, add the chopped onion and garlic, sautéing until softened and fragrant. Toss in the cubed pumpkin, cinnamon stick, star anise, and cloves, stirring to combine.

Pour in the chicken or vegetable broth, then return the seared duck to the pot. Season with salt and pepper to taste. Allow the mixture to simmer gently for about 30 minutes, or until the pumpkin is tender and the duck is cooked through.

Once the ragout is ready, remove the cinnamon stick, star anise, and cloves. Taste and adjust the seasoning if needed. Serve the Spiced Pumpkin and Duck Ragout hot, garnished with fresh herbs if desired.

This dish weighs approximately 1200 grams in total and serves 4 people. Each serving is around 300 grams and contains roughly 400 calories.
