Ingredients:

  • 250g Arborio rice
  • 500g pumpkin, diced
  • 1 liter chicken or vegetable broth
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 50g butter
  • 50g grated Parmesan cheese

To start, heat the chicken or vegetable broth in a saucepan over low heat to keep it warm. In a separate large saucepan, melt the butter over medium heat. Next, add the diced pumpkin to the rice mixture, stirring to combine. Begin adding the warm broth to the pan, one ladle at a time, stirring constantly until the liquid is absorbed. Continue this process until the rice is creamy and cooked to al dente texture, about 18-20 minutes.
