As the weather starts to cool down, I find myself craving warm, comforting dishes that fill the house with delicious aromas. Today, I wanted to share a recipe that combines the rich flavors of autumn with a surprising twist that will leave you craving more.

Ingredients:

  • butternut squash, diced
  • chorizo, sliced
  • apple, peeled and diced
  • onion, chopped
  • garlic, minced
  • smoked paprika
  • cinnamon
  • chicken broth
  • cooked quinoa
  • <li data-ingredient="Salt and pepper, to taste

Kitchen Tools:

  • large skillet
  • wooden spoon
  • oven

Preparation:

I start by preheating the oven to 400°F (200°C). While it’s heating up, I toss the diced butternut squash with a drizzle of olive oil, smoked paprika, cinnamon, salt, and pepper on a baking sheet. I roast it for about 20-25 minutes until it’s tender and slightly browned.

In a large skillet over medium heat, I cook the sliced chorizo until it’s crispy and has rendered its fat. Then, I add the chopped onion, minced garlic, and diced apple. I sauté everything until the onion is translucent and the apple has softened.

Next, I pour in the chicken broth and let it simmer for a few minutes to let the flavors meld together. I then add the cooked quinoa and roasted butternut squash to the skillet, stirring everything together until it’s well combined.

This Butternut Squash and Chorizo Quinoa Skillet is a hearty and flavorful dish that’s perfect for a cozy night in. It’s great on its own or served with a side salad for a complete meal.
