Ingredients:

  • black rice (200g)
  • coconut milk (400ml)
  • mango (1, diced)
  • ginger (1 tbsp, minced)
  • red chili (1, sliced)
  • lime (1, juiced)
  • coriander (a handful, chopped)

  • chef’s knife
  • cutting board
  • wooden spoon

Preparation:

Start by rinsing the black rice under cold water. In a saucepan, combine the black rice and coconut milk. Bring to a boil, then reduce to a simmer and cook for about 30 minutes until the rice is tender and the liquid is absorbed.

While the rice is cooking, prepare the toppings. In a separate saucepan, heat a little oil and sauté the minced ginger and sliced red chili until fragrant. Add the diced mango and cook for a few minutes until softened.

Once the rice is cooked, fluff it with a fork and transfer it to a serving bowl. Top with the mango mixture, a squeeze of lime juice, and a handful of chopped coriander. Mix everything together gently to combine all the flavors.
