Cozy Lamb and Pomegranate Stew Recipe

Today, I’m excited to share a recipe that always brings comfort and joy to my table. As the weather starts to cool down, I find myself craving warm, hearty dishes that are easy to prepare and full of flavor. This dish is perfect for a cozy night in with loved ones or a quiet evening to yourself.

Ingredients:

  • 500g lamb shoulder, cubed
  • 50ml pomegranate molasses
  • 2 cinnamon sticks
  • 100g dried apricots, chopped
  • 200g couscous
  • 50g pistachios, chopped
  • Handful of fresh mint leaves, chopped
  • 3 tbsp olive oil
  • Salt and pepper, to taste

Kitchen Tools:

  • large pot
  • wooden spoon
  • baking dish

To start, preheat your oven to 180°C. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the cubed lamb shoulder and season with salt and pepper. Sear the lamb until browned on all sides, then remove from the pot and set aside.

In the same pot, add the remaining olive oil and sauté the cinnamon sticks until fragrant. Add the dried apricots and pomegranate molasses, stirring to combine. Return the lamb to the pot and add enough water to cover the meat. Bring to a boil, then reduce the heat and let simmer for 1-1.5 hours until the lamb is tender.

While the lamb is cooking, prepare the couscous according to the package instructions. Fluff the couscous with a fork and stir in the chopped pistachios and fresh mint.

Once the lamb is done, transfer it to a baking dish and bake in the preheated oven for 10-15 minutes until the top is golden and crispy. Serve the lamb over the pistachio-mint couscous and enjoy the delicious blend of sweet and savory flavors.

This dish serves 4 and each serving is approximately 400g. One serving is around 500 calories.

Try adding a sprinkle of sumac to the lamb before baking for an extra burst of tangy flavor. Enjoy making this dish your own by experimenting with different spices and garnishes. I hope this recipe brings warmth and happiness to your home just as it does to mine. Happy cooking!
