Miso Mushroom Risotto: A Cozy Autumn Comfort

As the weather cools down and the leaves start to change colors, I find myself craving warm, comforting dishes that remind me of cozy nights at home. Today, I’m excited to share with you my recipe for Miso Mushroom Risotto. This unique twist on a classic dish combines the rich umami flavor of miso with earthy mushrooms for a truly satisfying meal.

Ingredients:

  • Arborio rice (250g)
  • Vegetable broth (1 liter)
  • White miso paste (2 tbsp)
  • Mixed mushrooms (300g)
  • Shallots (2, finely chopped)
  • Garlic (2 cloves, minced)
  • Parmesan cheese (50g, grated)
  • Butter (2 tbsp)
  • Fresh thyme (1 tbsp, chopped)
  • Salt and pepper (to taste)

Start by heating the vegetable broth in a large saucepan over medium heat. In a separate pan, melt the butter and sauté the shallots and garlic until fragrant. Add the Arborio rice to the pan and toast for a few minutes until slightly translucent.

Next, add a ladleful of warm broth to the rice and stir continuously until absorbed. Repeat this process until the rice is creamy and cooked to al dente, about 18-20 minutes. In a small bowl, mix the white miso paste with a splash of water until smooth, then stir it into the risotto.

Meanwhile, in another pan, sauté the mixed mushrooms with fresh thyme until golden brown and tender. Season with salt and pepper to taste. Once the risotto is cooked, stir in the grated Parmesan cheese and cooked mushrooms until well combined.

Serve the Miso Mushroom Risotto hot, garnished with more Parmesan cheese and thyme leaves. This dish weighs approximately 1300g when cooked and serves 4 people with each serving weighing around 325g. A serving of this flavorful risotto is approximately 350 calories.

One unusual tip for this recipe is to add a splash of white wine to the risotto just before serving for an extra layer of flavor that will take this dish to the next level.
