Cozy Moroccan Sweet Potato Stew

Moroccan-inspired Sweet Potato and Chickpea Stew

Today, I’m excited to share a cozy and flavorful stew that’s perfect for chilly evenings or lazy weekends. This Moroccan-inspired dish combines the earthy sweetness of sweet potatoes with the warm, aromatic spices of North African cuisine. It’s a hearty and satisfying meal that will warm you up from the inside out.

Ingredients:

  • 3 medium sweet potatoes, peeled and diced
  • 1 can (400g) of chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 ripe tomatoes, diced
  • 1 liter vegetable broth
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1 teaspoon ground coriander
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

To start, heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until they are soft and fragrant. Next, add the diced sweet potatoes and tomatoes to the pot, along with all of the spices (cumin, paprika, cinnamon, and coriander). Stir everything together and let the spices toast for a minute or two to release their flavors.

Pour in the vegetable broth and bring the stew to a gentle simmer. Let it cook uncovered for about 20-25 minutes, or until the sweet potatoes are tender. Add the drained chickpeas to the pot and continue to simmer for another 10 minutes to allow the flavors to meld together.

Once the stew is thick and fragrant, season with salt and pepper to taste. Serve hot, garnished with fresh cilantro for a burst of freshness.
