  • coconut milk (200ml)
  • curry powder (10g)
  • chickpeas, drained and rinsed (250g)
  • fresh ginger, grated (20g)
  • spinach (150g)
  • cooked quinoa (300g)

Kitchen Tools:

  • saucepan
  • wooden spoon
  • grater
  • knife

I start by heating a saucepan over medium heat and add the canned pumpkin, coconut milk, curry powder, chickpeas, and freshly grated ginger. I let the mixture simmer for about 10 minutes until the flavors meld together and the chickpeas are heated through.

Next, I stir in the fresh spinach until it wilts, creating a vibrant green color and adding a pop of freshness to the dish. I then gently fold in the cooked quinoa, ensuring it is evenly coated with the creamy pumpkin sauce.
