  • 1 large sweet potato, cubed

  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups baby spinach
  • 1 orange, zested and juiced
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 cup walnuts, chopped

I start by preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper. I drizzle the olive oil over the vegetables and sprinkle them with salt and black pepper. I toss everything together until the vegetables are evenly coated with the seasonings.
