Warm Winter Salad with Roasted Root Vegetables

Today, I’m excited to share a cozy and nutritious warm winter salad recipe that combines the earthy flavors of roasted root vegetables with a zesty citrus dressing. This dish is perfect for cold evenings when you want something comforting yet still healthy.

Ingredients:

  • 3 medium carrots, sliced
  • 2 parsnips, peeled and chopped
  • 1 large sweet potato, cubed
  • 1 red onion, thinly sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups baby spinach
  • 1 orange, zested and juiced
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 cup walnuts, chopped

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • whisk
  • vegetable peeler

I start by preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper. In a mixing bowl, I combine the sliced carrots, chopped parsnips, cubed sweet potato, and thinly sliced red onion. I drizzle the olive oil over the vegetables and sprinkle them with salt and black pepper. I toss everything together until the vegetables are evenly coated with the seasonings.

Next, I spread the vegetables out in a single layer on the prepared baking sheet and roast them in the preheated oven for about 30-35 minutes, or until they are golden brown and tender. While the vegetables are roasting, I prepare the citrus dressing.

In a small bowl, I whisk together the orange zest, orange juice, balsamic vinegar, and honey until the dressing is well combined. Once the vegetables are done roasting, I remove them from the oven and let them cool slightly.

To assemble the warm winter salad, I place the baby spinach in a large serving bowl and top it with the roasted root vegetables. I drizzle the citrus dressing over the salad and sprinkle the chopped walnuts on top for added crunch and nuttiness.

This warm winter salad with roasted root vegetables is a delightful mix of sweet, savory, and tangy flavors that come together beautifully. The roasted vegetables are caramelized and tender, while the citrus dressing adds a refreshing zing to every bite. It’s a hearty and satisfying dish that’s perfect for a light dinner or a side salad at your next gathering.

One unique tip for this recipe is to sprinkle some crumbled goat cheese over the salad just before serving. The creamy and tangy cheese adds a luxurious touch that takes this dish to the next level.
