Ingredients:

  • butternut squash (500g)
  • bread slices (4 slices)
  • spicy maple syrup (50ml)
  • olive oil (30ml)
  • salt (to taste)
  • black pepper (to taste)

  • oven

To start, preheat your oven to 200°C. Peel and dice the butternut squash into small cubes, ensuring they are all roughly the same size for even roasting. Drizzle the olive oil over the squash cubes and season with salt and black pepper. Roast the butternut squash in the oven for about 25-30 minutes or until they are golden brown and tender.

While the butternut squash is roasting, toast the bread slices until they are crispy and golden. Once the squash is done, remove it from the oven and let it cool slightly. Meanwhile, warm the spicy maple syrup in a small saucepan over low heat until it is smooth and runny.
