Savory Stuffed Acorn Squash

Today, I’m excited to share a comforting and flavorful recipe for savory stuffed acorn squash. As the weather starts to cool down, I love to indulge in hearty dishes that warm both body and soul. This dish is perfect for a cozy family dinner or a dinner party with friends.

Ingredients:

  • 2 small acorn squash (about 600g each)
  • 200g ground turkey
  • 1/2 cup quinoa
  • 1 cup vegetable broth
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

I start by preheating the oven to 400°F (200°C). Then, I carefully cut the acorn squash in half and scoop out the seeds and fibers with a spoon. I brush the insides with olive oil and season with salt and pepper before placing them face down on a baking sheet. I roast them for about 30-40 minutes, or until they are tender.

While the squash is roasting, I prepare the filling. In a skillet, I heat some olive oil and sauté the onion and garlic until they are fragrant. Then, I add the ground turkey, breaking it up with a spoon as it cooks. Once the turkey is cooked through, I stir in the quinoa, vegetable broth, thyme, smoked paprika, salt, and pepper. I let the mixture simmer until the quinoa is cooked and the liquid is absorbed.

Once the squash is tender and the filling is ready, I stuff each squash half with the turkey and quinoa mixture. I return them to the oven for another 10-15 minutes to allow the flavors to meld together.
