Ingredients:

  • 4 large bell peppers
  • 300g ground beef
  • 1 cup cooked quinoa
  • 1 can diced tomatoes
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Grated cheese for topping

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. In a large skillet, cook the ground beef, onion, and garlic until the beef is browned and the onions are soft. Add the cooked quinoa, diced tomatoes, paprika, cumin, salt, and pepper to the skillet and mix well.

Stuff each bell pepper with the beef and quinoa mixture and place them in a baking dish. Top each stuffed pepper with grated cheese. Cover the dish with foil and bake in the preheated oven for 25-30 minutes, until the peppers are tender.

Once the stuffed peppers are cooked through, remove them from the oven and let them cool slightly before serving. The savory aroma of the beef and quinoa filling will have your mouth watering in no time!
