Spiced Pumpkin and Pomegranate Soup

Today, I’m excited to share a cozy and comforting recipe perfect for the autumn season. This spiced pumpkin and pomegranate soup is a delightful blend of sweet and savory flavors that will warm you up from the inside out.

Ingredients:

  • 1 small pumpkin, diced (500g)
  • 1 pomegranate, seeds removed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 liter vegetable stock
  • 400ml coconut milk
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Kitchen Tools:

  • large pot
  • immersion blender

To start, heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent. Next, add the diced pumpkin, ground cumin, and ground coriander. Cook for a few minutes until the spices become fragrant.

Pour in the vegetable stock and coconut milk, then bring the mixture to a gentle simmer. Let it cook for about 20-25 minutes, or until the pumpkin is fork-tender.

Using an immersion blender, carefully blend the soup until smooth and creamy. Season with salt and pepper to taste.

To serve, ladle the soup into bowls and top with a generous sprinkle of pomegranate seeds for a burst of freshness and color.

The total weight of the cooked soup is approximately 1200g, with 4 servings at 300g each. Each serving contains approximately 250 calories.

One unique tip for this recipe is to sprinkle a pinch of cinnamon on top before serving for an extra layer of warmth and flavor.
