Today, I’m excited to share a cozy and comforting dish that reminds me of lazy weekends spent at home. This unique recipe combines a variety of flavors and textures to create a dish that is both hearty and satisfying. I love to make this when the weather starts to cool down and I’m in the mood for something warm and comforting.

Ingredients:

  • 1 large sweet potato (300g), peeled and diced
  • 1 can of chickpeas (400g), drained and rinsed
  • 1 can of coconut milk (400ml)
  • 2 tablespoons of red curry paste
  • 2 cups of kale (50g), chopped
  • 1 lime, juiced

Kitchen Tools:

Preparation:

Start by heating a large pot over medium heat. Add the diced sweet potato and cook for 5 minutes, until slightly softened. Next, add the drained chickpeas, coconut milk, and red curry paste to the pot. Stir well to combine and bring the mixture to a simmer. Let it cook for 15 minutes, until the sweet potato is tender.

Once the sweet potato is cooked through, add the chopped kale to the pot. Stir the kale into the curry mixture and let it cook for an additional 5 minutes, until the kale is wilted. Squeeze the lime juice over the curry and stir to combine.

Serving:

This flavorful sweet potato chickpea curry weighs approximately 800g once cooked. It serves 4 people, with each serving weighing around 200g. One serving of this dish contains approximately 300 calories.

Tips:
