As the weather gets cooler, I find myself craving warm and comforting dishes that are easy to prepare. Today, I want to share a recipe for Cheesy Mushroom Stuffed Peppers that is not only delicious but also a unique twist on a classic dish.

For this recipe, you will need the following ingredients:

  • 3 large bell peppers
  • 200g mushrooms
  • 1 small onion
  • 2 cloves of garlic
  • 100g cooked quinoa
  • 50g shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • sauté pan
  • mixing bowl
  • spoon

Start by preheating your oven to 375°F (190°C) and line a baking dish with parchment paper. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in the baking dish.

Next, heat olive oil in a sauté pan over medium heat. Add chopped onions and garlic, then sauté until translucent. Add chopped mushrooms and cook until they are soft. Season with salt and pepper to taste.

In a mixing bowl, combine the cooked quinoa, mushroom mixture, and shredded cheddar cheese. Mix well until everything is evenly incorporated. Spoon the mixture into the hollowed-out bell peppers, pressing down gently to pack the filling.

Bake the stuffed peppers in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Once cooked, remove the peppers from the oven and let them cool slightly before serving. These Cheesy Mushroom Stuffed Peppers are perfect for a cozy dinner on a chilly evening.

This recipe makes 3 servings, with each stuffed pepper weighing approximately 250g. One serving is around 300 calories.

A unique tip for this recipe is to sprinkle some breadcrumbs on top of the stuffed peppers before baking for an extra crispy texture.
