Today’s Recipe: Sweet Potato Shepherd’s Pie

Hey there, foodies! Today, I’m excited to share a twist on a classic comfort food dish that’s perfect for the chilly autumn evenings we’re experiencing right now. This Sweet Potato Shepherd’s Pie is a hearty and wholesome meal that will warm you up from the inside out.

Ingredients:

  • 2 large sweet potatoes, peeled and diced
  • 500g ground lamb
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 1 cup beef stock
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

To start, preheat your oven to 200°C. Boil the sweet potatoes in a large pot of salted water until they are fork-tender. Drain and mash them with a potato masher, then set aside.

In a skillet, heat olive oil over medium heat and sauté the onions and carrots until softened. Add the ground lamb and garlic, cooking until the lamb is browned. Season with salt and pepper to taste.

Pour in the beef stock and let the mixture simmer for about 10 minutes until the liquid has reduced slightly. Stir in the frozen peas and remove the skillet from heat.

Transfer the lamb mixture to a baking dish and spread the mashed sweet potatoes on top in an even layer. Dot the surface with butter and bake in the preheated oven for 25-30 minutes, until the sweet potatoes are golden brown and the filling is bubbling.

Once done, remove from the oven and let it cool slightly before serving. This Sweet Potato Shepherd’s Pie weighs approximately 1800g after cooking and serves 6. Each serving is around 300g with an estimated calorie count of 450.

One unique tip for this recipe is to sprinkle some grated Parmesan cheese on top of the sweet potatoes before baking for an extra layer of flavor and a crispy finish. Trust me, it’s delicious!
