That’s why I’m excited to share with you a unique twist on a classic comfort food — stuffed bell peppers! This recipe combines unexpected flavors and textures that will surprise and delight your taste buds.

Ingredients

  • 3 large bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1/2 cup canned corn
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro

Preparation

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers upright in a baking dish.

In a mixing bowl, combine the cooked quinoa, black beans, corn, salsa, cheddar cheese, avocado, and cilantro. Mix well to combine all the ingredients evenly.

Spoon the quinoa mixture into the hollowed-out bell peppers, packing them tightly to fill any gaps. Place the tops back on the peppers.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once cooked, remove the foil and bake for an additional 5-10 minutes to melt the cheese and brown the tops slightly.

Serve the stuffed bell peppers hot, garnished with extra cilantro if desired.

Clever Tip

To add a smoky flavor to this dish, try grilling the bell peppers before stuffing them. Simply char the peppers on a grill until the skins are blackened, then proceed with the recipe as usual. The grilled flavor will elevate the dish to a whole new level!
