  • 1 can of coconut milk (400ml)
  • 2 tablespoons of red curry paste
  • 1 tablespoon of grated fresh ginger
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 4 cups of vegetable broth
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

To bring this delicious soup to life, you will need the following kitchen tools:

  • cutting board

To start, heat some oil in a large soup pot over medium heat. Add the chopped onion, garlic, and grated ginger, and sauté until fragrant. Stir in the red curry paste and cook for another minute.

Next, add the diced pumpkin to the pot and stir to coat it in the curry mixture. Pour in the coconut milk and vegetable broth, then bring the mixture to a simmer. Let it cook for about 20-25 minutes, or until the pumpkin is tender.
