Cozy Up with This Winter Spiced Pumpkin and Chickpea Stew

Winter Recipe: Spiced Pumpkin and Chickpea Stew

As the colder months approach, I find myself craving comforting and aromatic dishes to warm me up from the inside out. Today, I’m excited to share with you my recipe for a Spiced Pumpkin and Chickpea Stew that is perfect for a cozy winter evening at home.

For this flavorful stew, you will need the following ingredients:

  • 500g pumpkin, diced
  • 400g canned chickpeas, drained and rinsed
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 400g canned diced tomatoes
  • 400ml coconut milk
  • 500ml vegetable broth
  • 200g fresh spinach
  • 1 tbsp curry powder, 1 tsp cumin, 1 tsp paprika, salt and pepper to taste
  • 2 tbsp olive oil

To prepare this hearty stew, start by heating the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, then stir in the minced garlic and grated ginger. Cook for another minute until fragrant.

Next, add the diced pumpkin to the pot and sauté for a few minutes until slightly caramelized. Sprinkle the curry powder, cumin, paprika, salt, and pepper over the pumpkin, stirring well to coat.

Pour in the canned diced tomatoes, coconut milk, and vegetable broth, stirring to combine. Bring the stew to a simmer, then cover and let it cook for about 20 minutes, until the pumpkin is tender.

Add the drained chickpeas to the pot and simmer for another 10 minutes to allow the flavors to meld together. Finally, fold in the fresh spinach and let it wilt into the stew.

Once the spinach has wilted, give the stew a taste and adjust the seasoning if needed. Serve the Spiced Pumpkin and Chickpea Stew hot, garnished with fresh cilantro or a dollop of yogurt, if desired.

This delicious stew weighs approximately 2400g once cooked and serves 6 hungry souls. Each serving is around 400g and comes in at an estimated 350 calories.

One unique tip for this stew is to sprinkle a handful of toasted pumpkin seeds on top for added crunch and flavor.
