Cozy Up with Winter Comfort Stew: A Hearty Recipe for Chilly

Winter Comfort Stew

Today, I’m excited to share a recipe that is perfect for cozy winter nights when you want something hearty and comforting. This Winter Comfort Stew is a dish that always brings me warmth and joy, and I hope it will do the same for you.

Ingredients:

  • beef stew meat (cubed) – 500g
  • sweet potatoes (peeled and diced) – 2 medium
  • pearl onions (peeled) – 200g
  • tomato paste – 2 tbsp
  • beef broth – 500ml
  • red wine – 250ml
  • rosemary – 2 sprigs
  • olive oil – 2 tbsp
  • salt and pepper – to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • Dutch oven
  • wooden spoon

Start by heating olive oil in a Dutch oven over medium-high heat. Add the beef stew meat and brown on all sides for about 5 minutes. Season with salt and pepper.

Next, add the pearl onions and diced sweet potatoes to the pot. Cook for another 5 minutes until the vegetables start to soften.

Stir in the tomato paste and cook for an additional 2 minutes to develop flavor. Pour in the red wine and beef broth, then add the rosemary sprigs. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5-2 hours until the meat is tender.

Once the stew is cooked, taste and adjust seasoning with salt and pepper if needed. Remove the rosemary sprigs before serving.

This Winter Comfort Stew weighs approximately 1500g in total, serves 4-6 people, with each serving weighing around 250g. Each serving is estimated to be around 350 calories.

One unique tip for this stew is to sprinkle some grated Parmesan cheese on top before serving. It adds a delicious nutty flavor that pairs perfectly with the rich stew.
