Once the potatoes are cooked through, use an immersion blender to blend the soup until smooth and creamy. Stir in the heavy cream and season with salt and pepper to taste. Let the soup simmer for another 5 minutes to allow the flavors to meld together.

Serve the creamy potato leek soup hot, garnished with a drizzle of olive oil and a sprinkle of fresh thyme leaves. This soup is perfect on its own as a light lunch or dinner, or you can pair it with a crusty bread or a simple salad for a more substantial meal.
