  • pumpkin puree (200g)
  • chicken broth (1 liter)
  • onion, finely chopped (1 medium)
  • garlic, minced (2 cloves)
  • fresh sage leaves, chopped (1 tablespoon)
  • ground cinnamon (1 teaspoon)
  • ground nutmeg (1/2 teaspoon)
  • parmesan cheese, grated (50g)
  • butter (50g)
  • salt and pepper, to taste

To start, heat the chicken broth in a saucepan until simmering. In another saucepan, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until softened. Stir in the arborio rice and cook for a few minutes until it becomes translucent.

Begin adding the warm chicken broth to the rice mixture, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This process should take about 20-25 minutes until the risotto is creamy and the rice is cooked through.

Next, fold in the pumpkin puree, fresh sage, cinnamon, nutmeg, and grated parmesan cheese. Season with salt and pepper to taste. Allow the flavors to meld together for a few more minutes before serving.

Once plated, you can garnish the risotto with additional parmesan cheese and a sprinkle of fresh sage leaves for an extra burst of flavor.
