That’s why I’m excited to share my latest creation with you today: Coconut Lime Avocado Ice Cream. This unique recipe combines creamy avocado with zesty lime and coconut flavors for a truly one-of-a-kind treat.

Ingredients:

  • 3 ripe avocados (peeled and pitted)
  • 400ml coconut milk
  • 120ml fresh lime juice
  • 100g honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Kitchen Tools:

  • whisk
  • ice cream maker

To start, scoop the flesh of the ripe avocados into a blender. Add in the coconut milk, fresh lime juice, honey, vanilla extract, and salt. Blend the mixture until smooth and creamy. Transfer the mixture to a mixing bowl and place it in the refrigerator to chill for at least an hour.

Once the mixture has chilled, remove it from the refrigerator and pour it into an ice cream maker. Churn the mixture according to the manufacturer’s instructions until it reaches a soft-serve consistency. Transfer the ice cream to a container and freeze for an additional 2-3 hours to firm up.
