Creamy Avocado Ice Cream with a Twist

Mint Chocolate Chip Avocado Ice Cream

Today, I’m excited to share a unique dessert recipe perfect for cooling down on a hot summer day: Mint Chocolate Chip Avocado Ice Cream. This creamy and refreshing treat is a surprising twist on a classic favorite that will leave your taste buds delighted.

Ingredients:

  • 2 ripe avocados (about 400g)
  • 1 can of coconut milk (400ml)
  • 1/2 cup of fresh mint leaves
  • 1/4 cup of honey
  • 1/2 cup of dark chocolate chips
  • 1 tsp of vanilla extract
  • A pinch of salt

Kitchen Tools:

  • blender
  • ice cream maker
  • spatula

To start, scoop out the flesh of the ripe avocados and add them to a blender along with the coconut milk, fresh mint leaves, honey, vanilla extract, and a pinch of salt. Blend the mixture until smooth and creamy.

Next, transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

While the ice cream is churning, chop the dark chocolate into small chunks. Once the ice cream is ready, fold in the dark chocolate chips until evenly distributed.

Transfer the ice cream to a sealed container and freeze for at least 4 hours, or until firm. When ready to serve, scoop the Mint Chocolate Chip Avocado Ice Cream into bowls and enjoy the unique combination of flavors.
