Crispy Potato Skins with Avocado Lime Dip

Today I am excited to share a recipe that’s perfect for a casual gathering with friends or a cozy night in — crispy potato skins with a zesty avocado lime dip. This dish combines the comforting crunch of roasted potatoes with the creamy tanginess of avocado for a delightful flavor experience.

Ingredients:

  • 4 medium russet potatoes (about 800g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 2 ripe avocados (about 400g)
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh cilantro (10g)
  • 1/2 cup sour cream (120g)

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Wash and dry the potatoes, then prick them a few times with a fork. Place the potatoes on the baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a knife.

While the potatoes are baking, prepare the avocado lime dip. In a mixing bowl, mash the avocados until smooth. Add the lime juice, minced garlic, chopped cilantro, and sour cream. Mix well to combine, then season with salt and pepper to taste.

Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato attached to the skin. Reserve the potato flesh for another use.

Increase the oven temperature to 450°F (230°C). Brush the potato skins with olive oil and sprinkle with salt and pepper. Place them back on the baking sheet, skin side up, and bake for another 10-15 minutes, or until they are crispy and golden brown.

Serve the crispy potato skins warm with the avocado lime dip on the side. The contrast of the crunchy skin and creamy dip is truly delectable.
