Ingredients:

  • Spaghetti (200g)
  • Avocado (1, ripe)
  • White Miso (2 tbsp)
  • Soy Sauce (1 tbsp)
  • Sriracha (1 tsp)
  • Garlic (2 cloves, minced)
  • Green Onion (2 stalks, chopped)
  • Black Sesame Seeds (1 tsp)

Start by cooking the spaghetti according to the package instructions in a pot of boiling salted water. In the meantime, prepare the sauce by combining the ripe avocado, white miso, soy sauce, sriracha, and minced garlic in a blender. Blend until smooth and creamy.

In a skillet over medium heat, sauté the chopped green onions in a little bit of olive oil until they soften. Add the avocado miso sauce to the skillet and stir well to combine. Let the sauce simmer for a few minutes to heat through.

Once the spaghetti is cooked al dente, drain it and add it to the skillet with the avocado miso sauce. Toss everything together until the spaghetti is well coated in the creamy sauce. Serve the pasta in bowls and garnish with black sesame seeds for a nutty crunch.
