  • arborio rice (200g)
  • onion (1, finely chopped)
  • garlic cloves (2, minced)
  • vegetable broth (1 liter)
  • white wine (100ml)
  • parmesan cheese (50g, grated)
  • butter (2 tbsp)
  • olive oil (2 tbsp)
  • salt and pepper to taste

To start, peel and finely dice the beetroot. In a saucepan, heat the olive oil over medium heat and sauté the onion and garlic until fragrant. Add the arborio rice and toast for a few minutes until slightly translucent.

Slowly pour in the white wine and allow it to be absorbed by the rice. Begin adding the vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. This process will take about 20-25 minutes, and the risotto should be creamy with a slight bite to it.

When the risotto is almost ready, stir in the diced beetroot and continue cooking until the beets are tender. Add the butter and parmesan cheese, stirring until melted and well combined. Season with salt and pepper to taste.

Once everything is well incorporated and the risotto has a creamy consistency, remove it from heat and let it rest for a few minutes before serving. Garnish with additional parmesan cheese and freshly cracked black pepper.
